Directions:
1. Cook and stir sausage, zucchini, bell pepper and onion in a large skillet on medium heat for 6 to 8 minutes or until sausage is lightly browned and vegetables are tender.
2. Stir in rice, corn and mango; cook and stir until heated through.
3. Stir in lime juice and cilantro; just before serving, if desired.
Yield: 4 servings (about 1-1/2 cups each)
