Directions:
1. Cut each sausage lengthwise, but not all the way through, so sausage lies flat. Cook sausage on preheated panini grill or large non-stick skillet until browned and heated through.
2. Spread 1 teaspoon mustard on top half of roll and 1 teaspoon raspberry preserves on bottom half of roll. Repeat with remaining rolls.
3. For each sandwich, layer bottom half raspberry preserves-side up with 1/4 cup arugula, one heated split sausage link, several apple slices and a slice of cheese. Top with top roll, mustard side down.
4. Grill sandwich on panini grill about 4-5 minutes or until crips and golden brown.
Cook's Tip: Substitute 8 slices Italian bread for ciabatta rolls. If you don't have a panini grill you can use a large non-stick skillet to cook the sandwiches. Place a pie plate weighted down with heavy canned goods on top of the sandwiches while they cook. Cook the first side 2 minutes or until golden brown then carefully turn the sandiwch. Weight it down again to cook another 2 minutes until cheese melts and second side is crisp and golden brown.
Yield: 4 servings (1 sandwich each)
