Ingredients

1/4 Lb.

bacon, chopped

2 Cups

chopped onion

carrots, cut into ½” slices

1 Can

(15 ounces) red kidney beans, rinsed and drained

1 Can

(15.5 ounces) cannellini beans, rinsed and drained

1 Can

(14 ounces) chicken broth

1 Cup

water

3 Cloves

garlic, minced

1-2 teaspoons hot pepper sauce (optional)

1/2 Tsp.

dried thyme

1/2 Tsp.

dried oregano

1/2 Tsp.

dried sage

1/4 Tsp.

ground black pepper

bay leaf

1 Can

(14.5 ounces) petite-diced tomatoes, undrained

Preparation

Cut sausage into 1” pieces; set aside.  Cook bacon in 4-5 quart pan over medium heat, stirring occasionally 8-10 minutes or until browned.

Add all remaining ingredients except sausage and tomatoes.  Bring to a boil; reduce heat to medium and cook, uncovered 20 minutes.

Add sausage and tomatoes.  Return to a boil and cook 25 minutes longer or until mixture is slightly thickened.  Remove bay leaf and serve.
