Sausage Stuffed Avocado

Lit’l Smokies® Smoked Sausages placed in the center of an avocado quarter and baked with corn, black bean salsa and melted mozzarella.

  • 1 package Lit'l Smokies®
  • 1 tablespoon prepared corn & black bean salsa
  • 1 avocado
  • 1 tablespoon shredded cheddar cheese
  1. Preheat oven at 400°F.
  2. Split the avocado in quarters and remove the seed. Scoop out the middle leaving some around the edge. Mix the avocado, cocktail links and salsa in a small mixing bowl and place back into the avocado skin.
  3. Top with cheddar cheese and bake for 10 minutes.
  4. Remove from oven and garnish with tortilla strips.
