Smoked Sausage and Potato Skillet

Ingredients

1/2

(1.25 lbs.) bag mini golden potatoes

1

red bell pepper, thinly sliced

1

(8 ounce) package whole baby carrots

1/4 Cup

green peas

1 Tbsp.

unsalted butter

1 Tsp.

freshly chopped thyme

1 Tsp.

freshly chopped parsley

To taste kosher salt and ground black pepper

Preparation

Boil water in a large pot. Cook the potatoes for 15 minutes, remove and slice in half; set aside. In the same boiling water, cook the carrots for 5 minutes and drain. Heat a large skillet over medium-high. Heat skillet over medium-high heat and cook sausage 2 minutes, add the potatoes, carrots, peppers and peas. Continue to cook for 10 minutes and finish with butter. Season with the fresh herbs, salt and pepper.
